Awesome Cabbage Salad

  • small red cabbage (size of 2 fists), finely sliced
  • red onion, finely sliced
  • pack of fresh coriander, chopped
  • 3 tbsp vinegar (1 balsamic, 2 regular)
  • 1.5 tbsp olive oil
  • 1/2 teaspoon salt

Spicy Mayonaise

  • 3/4 cup mayonnaise
  • juice 1 lime
  • 2-3 chiles
  • a sprinkle of dried chilli flakes and / or arbol chilli powder
  • 1 tsp tomate frito artesano
  • 1 large garlic clove

For battered fish

  • 700g cod, skinned and cut into 1×4 inch strips
  • 1 cup all purpose flour
  • 1 tsp salt
  • 1/2 teaspoon ground black pepper
  • 1 cup beer

To serve

  • 12 (6-inch) soft corn tortillas, warmed
  • Lime wedges, for serving
  1. Toss the cabbage salad ingredients together and put in serving bowl.
  2. Blitz the spicy mayo ingredients together and put in bowl to serve
  3. Mix the flour, salt and pepper together in a medium bowl. Gradually add the beer, whisking until the batter is smooth with no lumps.
  4. Heat oil to deep fry fish until VERY VERY hot. If it isn’t hot enough the fish will be soggy not crispy – don’t be lazy.
  5. Dip the fish strips in the batter and cook in VERY small batches. You can’t coat them all or do a big batch – the fish will be soggy and that’s not the point.
  6. Cook about 2 minutes per side.
  7. Serve – put spicy mayo on tortilla, add cabbage salad, add fish pieces.
