needs more spice – garam masala? ground cumin as well?
- ginger a small chunk
- garlic 4 cloves,
- onions 2, roughly chopped
- chillies 4,
- ground turmeric 1 tsp
- cumin seeds 1 tbsp
- coriander seeds 1 tbsp
- lamb chunks 600g
- tin chopped tomatoes
- tomato purée 1 tbsp
- spinach 100g
Put the ginger, garlic, chillies, 1 of the onions, 1tsp salt and 1 tbsp water in a food processor and whizz to a paste.
Heat 1 tbsp oil in a pan then add the coriander and cumin seeds and fry until fragrant. Add garlic paste, tomato paste and 2nd onion and cook for 3-4 minutes until fragrant.
Add the tumeric.
Add the lamb and the tinned tomatoes.
Leave to slow cook for 6 – 8 hours.
Take out lamb and remove bones and shred if needed.
Put sauce back on hob and add spinach and lamb and simmer until thick.
