(Yields enough for 4 large burritos)
4 garlic cloves, sliced
chunk of red and green peppers, finely diced
450g mince
1 tsp dried oregano
1 tsp. ground cumin
1tsp smoked paprika
1 tbs. Worcestershire sauce
1 tbs. seasoned breadcrumbs
1 egg , whisked
Toppings:
red or spring onion, sliced
tomatoes, finely sliced
grated cheddar
Or try one of these additional toppings: sauteed mushrooms, caramelized onions, guacamole, goat cheese or feta cheese!
- soften peppers and garlic in a little oil.
- add beef, breadcrumbs and spices and fry until cooked
- once the meat is cooked, lay out all your tortillas and spoon the meat into the centre of each one (you’re gonna fold in all the sides).
- layer tomato, sliced onion and cheese on top
- Assemble – fold in the top and bottom of the tortilla.
- brush the folded parts and the edges with beaten egg
- fold in the sides to make a nice neat square burrito shape.
- Reuse the frying pan from the beef and fry each burrito until browned on both sides. Serve immediately
